Simon Rimmer served up a tasty pork el pastor with pineapple and sweet potato on Sunday Brunch.

The ingredients are: 1kg pork shoulder, large cubes, 4 dried red chillies, 3 ancho chillies, 100g pickled jalapenos, 30g soft dark brown sugar, 6 cloves sliced garlic, Tin pineapple chunks, drained, but keep the juice, 4 x roasted sweet potatoes in their jackets, 150g butter and Sour cream and coriander to serve.
