Lesley Waters serve up iced treats to cool you down this summer on This Morning.
Lesley’s iced treats includes, Iced Eaton mess, Mango, passion and lime shots, Chilli sorbet, Posh Arctic roll, Coffee and vanilla frappe and Espresso ice cream cup.
The ingredients for the Eaton mess are: 1 x 500g tub Total Greek yoghurt, 4 meringues, crumbled – any shape will do as they are being crumbled, 85g (3oz) pistachio, 225g/8oz raspberries, 2-3 teaspoons icing sugar, Extra raspberries and strawberries.
To prepare the mess, line 4, approx. 150ml teacups with clingfilm. Gently mix together the yoghurt, meringues and nuts. Spoon into theprepared teacups. Freeze for 2 ½ hours or until semi-frozen
Meanwhile make raspberry sauce, place the raspberries in a small blender with the icing sugar and blitz until smooth adding more sugar to taste
Remove the ramekins from the freezer. Tip out the iced cups onto 4 serving plates and remove cling film. Trickle over the raspberry sauce and finish with the extra fruit, serve.
