Freddy Forster chicken satay skewers with cheesy potato wedges recipe on Steph’s Packed Lunch

Freddy Forster served up tasty chicken satay skewers with cheesy potato wedges on Steph’s Packed Lunch.

The ingredients are: 4 large chicken thighs, boneless and skinless , Drizzle of olive oil and Pinch of dried thyme.

For the satay sauce: 3tbsp smooth peanut butter , 1tbsp runny honey , 1 lemon, juiced , 1 lime, juiced , 1tbsp soy sauce , 1 clove garlic, peeled and fine paste , 1tbsp coriander, finely chopped , 1tbsp coconut cream and 200ml water/coconut milk.

To garnish: 1 spring onion, finely chopped , Few leaves of coriander and ½ tbsp red chilli, finely sliced.

For the cheesy potato wedges: 2 medium potatoes , 75ml chicken stock , 150g Cheddar cheese, grated and 1tbsp chives, chopped.
