Simon Rimmer chicken teriyaki with rice recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty chicken teriyaki with rice and stir fry vegetables on Steph’s Packed Lunch.

The ingredients are: 4 boneless chicken thigh fillets, skin on, 80ml soy sauce, 80ml sake, 80ml mirin and 1tbsp caster sugar.

For the stir fry: 2tbsp vegetable oil, 2 carrots, peeled and julienned, 1 head pak choi, sliced, 1tbsp pink pickled ginger, chopped, 1 lime, zested, 3 spring onions, sliced and 1tbsp edamame beans.

To serve: 1tbsp coriander, chopped, 1 lime, wedged, 1 red chilli, sliced with seeds, 1tbsp sesame seeds, to garnish and Microwavable rice.
