Charlene Ashong served up a tasty plant based Caribbean Coconut Curry with a variety of vegetables and Jamaican seasoning on This Morning.
The ingredients for the stock are: 2 Bay Leaves, Sprigs of Thyme, 1 Curry Leaf, 2 Crushed Garlic, 1/2 White Onion, 2 Spring Onion and 1/2 Scotch Bonnet.
For the vegetables: 200g White Cabbage, 200g Yam/Plantain, 150g Sweet potato, 200g Cauliflower, 100g Courgette/Carrot and 50g Leeks Handful of Spinach.
For the liquids: 1/2 jug of water, 1 Tin of Coconut Milk/Cream and 150 ml Extra Virgin Olive Oil.
For the Jamaican Curry Seasoning: Turmeric , Allspice , Nutmeg , Cumin seeds , Ground Ginger , Ground Clove, Staple Seasonings and Sea Salt/Garlic Salt Black Pepper.
To Garnish: Flat Leaf Parsley/Thyme.
