Sabrina Ghayour leek and potato bhaji recipe on Steph’s Packed Lunch

Sabrina Ghayour served up tasty leek and potato bhaji on Steph’s Packed Lunch.

The ingredients are: 2 large leeks, trimmed, halved length-ways and sliced into 3/4cm thick half-moon slices, 350g red potatoes, grated, 1tsp cumin seeds, 1tsp ground cumin, 1tsp ground coriander, 1tsp cinnamon, 1tsp turmeric, 1tsp paprika, 1tsp garlic granules, Salt and pepper, 5tbsp of cold water, 75g chickpea or gram flour and Vegetable or sunflower oil for frying/

To garnish (optional): Big handful of cornflakes, Handful of pomegranate seeds, 1/2 small red onion, very finely chopped, Handful of fresh coriander or dill, chopped, Greek style yogurt, thinned to a pouring consistency and Sweet tamarind sauce.
