Simon Rimmer Nan’s chocolate pudding with dark rum, marshmallows and pecan nuts recipe on Steph’s Packed Lunch

Simon Rimmer served up his Nan’s favourite chocolate pudding with dark rum, marshmallows and pecan nuts on Steph’s Packed Lunch.

The ingredients are: 225g unsalted butter, melted, 2 medium free-range eggs, beaten, 30ml strong espresso coffee, 550ml whole milk, 350g soft dark brown sugar, 175g self-raising flour, sieved, 50g cocoa powder, 100g whole pecans, 75g raisins, soaked in 75ml dark rum and 30g golden syrup.

For the sauce: 300ml double cream, 50g caster sugar, 1 vanilla pod, seeds removed and 100g pink marshmallows.
