Simon Rimmer breakfast pizza with bacon recipe on Steph’s Packed Lunch

Simon Rimmer served up a delicious breakfast pizza with bacon on Steph’s Packed Lunch.

The ingredients for the flatbread base are: 375g plain flour, 1tsp salt, 375g natural yoghurt, Heaped 1tsp baking powder, 1 clove garlic, peeled and crushed.

For the topping: 1 red onion, peeled and thinly sliced, 12 plum toms, halved, 200ml olive oil and 3 cloves garlic.

To serve: 12 slices streaky smoked bacon, fried, 400g mozzarella, grated, 4 medium free-range eggs, 1 spring onion, chopped, to garnish.
