John Whaite salmon pizza recipe on Steph’s Packed Lunch

John Whaite served up a tasty pizza with salmon topping and pickled cucumber on Steph’s Packed Lunch.

The ingredients for the dough are: 120g strong white bread flour, plus extra for dusting, 30g spelt flour, 5g fast-action yeast, 3g fine sea salt and 90ml warm water.

For the topping; 150g full-fat cream cheese, 3 anchovies from a can or jar, roughly chopped, 1tbsp fresh dill fronds, chopped, plus extra to serve, 1tbsp chives, chopped, Zest of ½ unwaxed lemon, 1tsp coarse black pepper and 140g skinless salmon fillet, diced.

For the pickled cucumber: Juice of 1 lemon, 1tbsp cider vinegar, 1tbsp caster sugar, 1tsp fennel seeds, 1tbsp capers and ½ cucumber, very thinly sliced in rounds.
