James Golding pan roasted partridge with whipped ‘cosmic’ mash recipe on Sunday Brunch

James Golding served up a tasty pan roasted partridge with whipped ‘cosmic’ mash on Sunday Brunch.

The ingredients are: 4 Hampshire partridge breasts, 100g mashed potatoes, 50g beetroot puree , 100ml double cream, 150g oyster mushrooms, Handful of parcel or flat leaf parsley, Few sprigs of thyme, 1 clove of garlic , A few splashes of maple vinegar, Whole lemon, Olive oil, Salt and pepper and 100g Butter.

To served: Red wine sauce and a handful of mustard frills or garnish leaves.
