Briony Williams spiced carrot cake with ginger, walnuts and raisins recipe on Lorraine

Briony Williams served up a delicious spiced carrot cake with orange, ginger, walnuts and raisins on Lorraine.

The ingredients are: 320g carrots, grated, 100g walnuts, chopped, 100g raisins, 300g plain flour, 2 tsp bicarbonate of soda, 2 tsp ground cinnamon, 1 tsp allspice, 1 tsp ginger, 1 tsp salt, 300ml vegetable oil, 5 medium eggs, 1 tsp orange zest, Juice of half orange, 1 tsp vanilla extract, 200g golden caster sugar and 200g light brown sugar.

For the icing: 250g unsalted butter, softened, 500g icing sugar, 1.5 tsp orange extract, ½ tsp cinnamon, ¼ tsp allspice, ¼ tsp ginger and Splash of milk.
