Jeremy Pang Chilli Oil Noodles and Steamed Aubergine with Spring Onion and Garlic Dressing recipe on Jeremy Pang’s Asian Kitchen

Jeremy Pang served up tasty Chilli Oil Noodles and Steamed Aubergine with Spring Onion and Garlic Dressing on Jeremy Pang’s Asian Kitchen.

The ingredients for the Chilli Oil Noodles: ½ spring onion, Handful of coriander, Flat wheat noodles or thin wheat noodles or wheat soba noodles / mafalde(ine) pasta.

For Steamed Aubergine With Spring Onion and Garlic Dressing: 2-3 Chinese purple aubergines and 1 teaspoon salt.

Sauce mix for the Chilli Oil Noodles: 2 tbsp. vegetable oil, ½ spring onion, 2-3 cloves garlic, ¼ thumb sized piece of ginger, 2 Tbsp Chiu Chow Chilli Oil, 1 ½ Tbsp Seasoned Rice Vinegar, ½ tsp Premium Dark Soy Sauce and 1 tsp ready toasted sesame seeds.

Sauce mix for the Steamed Aubergine With Spring Onion and Garlic Dressing: 2 Tbsp vegetable oil, ½ spring onion, 2-3 cloves garlic, ¼ thumb sized piece of ginger, 2 Tbsp Chiu Chow Chilli Oil, 1½ Tbsp Seasoned Rice Vinegar, ½ tsp Premium Dark Soy Sauce, 1 tsp ready toasted sesame seeds and 1 Tbsp sugar.
