Theo Michaels buffalo hot wings with potato wedges recipe on Steph’s Packed Lunch

Theo Michaels served up tasty buffalo hot wings with potato wedges on Steph’s Packed Lunch.

The ingredients for the wedges: 800g white potatoes, cut into wedges, unpeeled, 30ml vegetable oil, 1tbsp smoked paprika and 1 pinch cayenne.

For the crispy wings: 1kg chicken wings, jointed, tips removed, 200g plain flour, 70g cornflour, 1tsp salt, 1tsp ground black pepper, 350ml whole milk, 1 medium free-range egg and 500ml vegetable for deep frying.

For the buffalo hot sauce: 150ml ‘Franks’ hot sauce, 50g unsalted butter, 15ml honey and 1tsp white wine vinegar.
