Gok Wan chicken satay salad with pomegranate seeds and baby gem lettuce recipe on This Morning

Gok Wan served up a speedy chicken satay salad with pomegranate seeds and grilled baby gem lettuce on This Morning.

The ingredients are: 2 chicken breasts, bashed flat, 1 tbsp light soy, 1 tsp mild curry powder, ¼ tsp cumin powder, 1½ cloves minced garlic, 2 tsp clear honey , Oil, to fry, 4 x baby gem lettuce, halved, 2 shallots, thinly sliced and pickled in rice wine vinegar and sugar, ¼ cucumber, sliced into half moons , 2 tbsp pomegranate seeds , finely chopped coriander , 2 spring onions cut diagonally , Salt and pepper.

For the satay sauce: 2 tbsp crunchy peanut butter, 1 tsp oyster sauce , 1 tbsp lime juice , 1 tbsp sweet chilli sauce, 2 tbsp hot water, to loosen.
