Simon Rimmer Jaffa cake cheesecake with chocolate and orange marmalade recipe on Sunday Brunch

Simon Rimmer served up a delicious Jaffa cake cheesecake with chocolate, ricotta and orange marmalade on Sunday Brunch.

The ingredients for the base: 4 eggs, 100g sugar and 100g plain flour.

For the filling: 500g full fat cream cheese, 500g ricotta, 200g 70% cocoa solid choc, 75g cocoa powder, 6 eggs and 150g golden caster sugar.

For the orange layer: 1 tbsp orange marmalade, pack of orange jelly and 125ml boiling water to make the jelly.

For the chocolate top: 200ml double cream, 200g chocolate, 20g butter and 25g sugar.
