Simon Rimmer rather nice dish dish with haddock, corn and cucumber salad recipe on Sunday Brunch

Simon Rimmer served up a rather nice dish dish with haddock, corn and cucumber salad on Sunday Brunch.

The ingredients are: 300g haddock, cut into bite size chunks, Juice and zest 4 limes, 1 finely chopped birds eye chilli and 10g sugar.

For the salad: 2 corn cobs, 1 cucumber, chopped, 2 large beef toms, chopped, 6 finely chopped spring onions, Half bunch roughly chopped coriander and 2 tbs olive oil.
