Freddy Forster stuffed mushrooms with a spicy tomato sauce recipe on Steph’s Packed Lunch

Freddy Forster served up stuffed mushrooms with a spicy tomato sauce for a tasty meat free meal on Steph’s Packed Lunch.

The ingredients for the rice and vegetable filling are: 1tbsp onion, peeled and finely chopped, ½ tsp garlic, peeled and chopped, 1 sprig thyme, 25g unsalted butter, 100g celery, finely chopped, 100g sweet potato, peeled and finely chopped, 150g Arborio risotto rice, Salt/Pepper, 25ml white wine, 300ml vegetable stock, 50g parmesan cheese, grated, plus extra for sprinkling on top, ¼ tsp Marmite, 1tbsp chives, chopped and 1tbsp breadcrumbs, plus extra for sprinkling on top.

For the Mushrooms: 4 x medium/large Portobello Mushrooms, Olive oil and Salt&Pepper.

For the Spicy tomato sauce: ½ onion, peeled and finely chopped, ½ tsp garlic, peeled and chopped, 1tsp chilli flakes, ¼ fresh red chilli, chopped, 1 tin plum cherry tomatoes, 2tbsp tomato ketchup, 100ml vegetable stock, 25g unsalted butter and Few sprigs of basil.

For the croutons: 1 x Slice Wholemeal bread, Olive oil and Sea salt.

To serve: Rocket leaves.
