Simon Rimmer potato and mushroom rogan josh recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty low-cost potato and mushroom rogan josh on Steph’s Packed Lunch.

The ingredients are: 2tbsp sunflower oil, 450g chestnut mushrooms, quartered, 1 tin chopped tomatoes, 450g potato, peeled and cut into large chunks, 200ml water and 50g frozen peas.

For the paste: 3 cardamom pods, 3 whole cloves, Approx. 50ml veg oil, 1 onion, peeled and chopped, 3 cloves garlic, peeled and chopped, 1 red pepper, de-seeded and chopped, 3 red chillies, de-seeded and chopped, 50g tomato puree, 1tsp ground cumin, 1tsp ground coriander, 1tsp ground cinnamon, 1tsp turmeric and 1tsp salt.

To serve: Steamed basmati rice, 400g yoghurt, 2tbsp coriander, chopped and 100g flaked almonds.
