Rick Stein served up a tasty baked ham with vegetables including new potatoes and English salad cream on Rick Stein’s Cornwall.
The ingredients for the ham are: 2.8kg smoked gammon joint, boned and rolled, 600ml cider, 1½ tsp black peppercorns, 6 cloves, ½ tsp chilli flakes and 4 bay leaves.
For the English salad cream: 2 free-range eggs, 1 tbsp plain flour, 4 tsp caster sugar, ½ tsp salt, 100ml vinegar (Moscatel or sweet sherry vinegar), 100–150ml double or whipping cream and few drops Tabasco or lemon juice (optional).
For the glaze: 2 tbsp English mustard, 1 free-range egg yolk, 1 tsp cornflour, 1 tsp clear honey and 3–4 tbsp fine dried breadcrumbs.
To serve: boiled new potatoes, buttered, lettuce, tomatoes, cucumber, celery sticks, spring onions and hard-boiled free-range eggs.
