Simon Rimmer orange, pistachio and polenta cake recipe on Sunday Brunch

Simon Rimmer served up a delicious orange, pistachio and polenta cake on Sunday Brunch.

The ingredients are: 200g polenta, 200g self-raising flour, Tsp baking powder, 3 eggs, Juice and zest 1 orange, 3tbsp cointreau, 250g ricotta, 75g lightly chopped pistachios, 225g sugar, 100g melted butter and 2 tbsp warm water.

For the sauce: 100ml water, 150ml OJ, 250g sugar, 150ml cream and zest 1 orange.
