Simon Rimmer Brussels Sprout Falafel recipe on Sunday Brunch

Simon Rimmer served up tasty Brussels Sprout Falafel for the festive season on Sunday Brunch.

The ingredients are: 250g split fava beans (British if possible) soaked in cold water overnight, 3 cloves garlic, 125g shredded sprouts, Half tsp bicarbonate of soda, 1 Tsp gram flour, 2 tsp cumin. 2tbsp chopped parsley, Half tsp chilli flakes and Approx. 30g sesame seeds.

For the dip: 200g yoghurt, 50g tahini, 1 clove of crushed garlic and 1 Tbs cranberry sauce.
