Simon Rimmer served up a tasty and festive stuffed cauliflower with dates, apricot and pistachios on Sunday Brunch.
The ingredients: 1 head cauliflower – cored out stalk.
For the marinade: 200g yoghurt, 1 onion, sliced and well caramelised and 10g sage.
For the stuffing: 1 onion, chopped, 2 cloves garlic, 200g rye breadcrumbs, 50g pistachios, 10g sage, 6 dried apricots, 6 dates, 2 eggs and 30g butter.
Garnish with dried cranberries and more pistachios.
