Chigs spiced hot chocolate cake with cream cheese and marshmallow recipe on Steph’s Packed Lunch

Chigs for the Great British Bake Off served up a delicious spiced hot chocolate cake with cream cheese and marshmallow on Steph’s Packed Lunch.

The ingredients for the Chocolate Cake Batter: 220g all-purpose flour, 380g sugar, 120g cocoa powder, 2 teaspoons baking soda, 1 teaspoon baking powder, 1 teaspoon salt, 2 teaspoon of cinnamon, 1 cup buttermilk, 110ml vegetable oil, 2 large eggs, 3 teaspoons vanilla bean paste and 230ml freshly brewed hot coffee that’s cooled down.

For the Chocolate Cream Cheese Icing: 660g cold Philadelphia cream cheese, 110g cocoa powder, 430g Icing sugar, 100g semi-sweet chocolate 50-60%, melted and cooled, 1 tablespoon vanilla bean paste and 5 table spoons of whole milk if need to get the correct consistency.

For the Whipped Marshmallow: 4 large egg whites, 200g caster sugar, 1/4 teaspoon cream of tartar and 1 teaspoon vanilla extract.

For the Chocolate Spice Sugar Dust: 1 tbsp icing sugar, 0.5 tsp unsweetened cocoa powder, 0.5 tsp sweet ground cinnamon and 20g grated 70% dark chocolate shavings.
