Simon Rimmer Asian style pork belly with noodles recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty Asian style pork belly with noodles on Steph’s Packed Lunch.

The ingredients for the sticky pork belly: 700g pork belly, rind removed, cut into 4 slices, 100ml light soy, 50g honey, 50ml black rice vinegar, 70g ketchup, 25mm piece ginger, peeled and grated, 2 garlic cloves, peeled and grated, 50ml water.

For the Noodles: 2tbsp vegetable oil, 4 spring onions, chopped, 3 cloves garlic, peeled and sliced, 50mm piece ginger, peeled and cut into matchsticks, 100g shitake mushrooms, thinly sliced, 1 red chilli, sliced, 100g edamame beans, 350g cooked thin egg noodles, 200ml light soy and Juice 2 limes.

To serve: 2tbsp coriander, chopped.
