John Whaite biscoff banoffee pie recipe on Steph’s Packed Lunch

John Whaite served up a delicious biscoff banoffee pie on Steph’s Packed Lunch.

The ingredients for the pastry: 125g butter, softened, 25g golden caster sugar, 1 large egg, 40g Lotus Biscoff Biscuits, pulsed to a fine crumb and 190g plain flour.

For the filling: 5 Ripe (but not too squishy) bananas, cut into 1.5cm-thick slices, 2 tbsp icing Sugar, 160g unsalted butter, 140g of light brown muscovado sugar, ¼ tsp fine salt, 397g can condensed milk, ½ tsp of Vanilla Bean Extract and 4 Lotus Biscoff Biscuits.

For the Whipped Cream: 500g double cream, 1 tbsp sugar and 1tbsp rum (optional).
