Ainsley Harriott pineapple upside-down cake with rum and coconut custard recipe on Ainsley’s Good Mood Food

Ainsley Harriott served up a delicious calypso pineapple upside-down cake with rum, lime and coconut custard on Ainsley’s Good Mood Food.

The ingredients are: 100g butter, softened, 100g golden caster sugar, 2 large eggs, 100g self raising flour, 1 tbsp baking powder, zest of 1/2 lime, pinch of salt, 1 tsp vanilla extract and 2 tbsp spiced rum.

For the topping: 50g butter, softened, 50g brown sugar, 1 tbsp spiced rum, zest of 1/2 lime, 4-6 pineapple rings in juice, drained and juice reserved and 4-6 glace cherries.
