Phil Vickery served up a delicious plum cake with crumble topping and clotted cream on This Morning.

The ingredients are: 220g soft salted butter, room temperature, 220g caster sugar, 4 medium eggs (at the same temperature as the butter), beaten, 220g self-raising flour, ½ tsp baking powder, 100g ground almonds, 3-4 ripe plums, about 350 – 400g, For the crumble, 60g cold butter, 125g plain flour, 80g caster sugar and 50g flaked almonds.

For the stewed plums: 4 ripe plums, stoned and chopped, 50ml water, 2-3 tbsp caster sugar, Squeeze of lemon and 2 tsp cornflour mixed with 2 tsp cold water.

To serve: clotted cream or custard.
