Kate Humble served up a tasty pangrattato with spelt and spring vegetables tray bake on Escape To The Farm.
The ingredients are: 150g pearled spelt, 200ml white wine, 300ml vegetable stock, 2 fennel bulbs, sliced, 2 handfuls broad beans, 200g green beans, 1 small bunch tarragon, chopped, 4 cloves garlic, sliced, Parmesan, olive oil, sea salt and freshly ground black pepper.
For the topping: 75g soft breadcrumbs, made from stale bread, 2 cloves garlic, finely chopped, half a small bunch parsley, finely chopped, half a small bunch chives, finely chopped, Zest of 1 lemon and Chilli flakes, to taste.
