Simon Rimmer serve up a delicious apple cake with Lancashire cheese crumble topping on Sunday Brunch.
The ingredients are: 350g cooking apples, 350g eating apples (both peeled and chopped), 50g sugar and 1tsp vanilla extract.
For the crumble: 75g flour, 75g butter, 75g demerara sugar and 50g crumbled Lancashire cheese.
For the cake: 150g unsalted butter, 25g sour cream, 175g golden caster sugar, 2 large eggs, 175g self raising flour, 1tsp cinnamon, and 1tsp vanilla extract.
