Simon Rimmer rarebit pork chops with tomato salad recipe on Steph’s Packed Lunch

Simon Rimmer served up tasty rarebit pork chops with tomato salad on Steph’s Packed Lunch.

The ingredients are: 4 pork chops, edges sniped, 300g mature cheddar, 100g grated Parmesan, heaped tbsp grain mustard and 1 egg.

For the salad: 1 tbsp honey, 50ml sherry vinegar, 125ml good quality extra virgin olive oil, 2 tsp sea salt, 4 ripe plum tomatoes, cut into slices, 1 beef tomato, cut into half moons, mix of 12 blush and heritage tomatoes, 6 sundried tomatoes, sliced, 1 tsp chilli flakes, tin butter beans, drained and washed, 2 tbsp chopped tarragon.
