John Whaite served up a delicious strawberry jelly cake traybake on Steph’s Packed Lunch.
The ingredients are: 225g soft unsalted butter/stork, 300g caster sugar, 4 large eggs, 240g whole milk, 250g self-raising flour, 1/2 tsp fine salt and 2 x 11.5g sachets strawberry jelly powder.
For the icing: 150g soft unsalted butter, 180g icing sugar, sifted, 2 tsp jelly powder(taken from the quantity above), 320g full-fat cream cheese.
To finish: 200g fresh strawberries, sliced and freeze-fried raspberry or strawberry chunks(optional).
