Ainsley Harriott kicked off the new series of his hit TV show serving up a tasty gold top Irish Stew with crusty bread on Ainsley’s Food We Love.
The ingredients are: 1kg lamb shoulder or neck, boneless, trimmed and cubed, salt and freshly ground black pepper, 1 litre of lamb stock or vegetable stock, 2 bay leaves, 80g pearl barley, 2 large onions, sliced, 1 leek cut into thick slices, 2 sprigs of thyme, 1 small clove of garlic, minced, 3-4 carrots, chopped into chunks, 450g floury potatoes, peeled and chopped into chunks, 1 tbsp butter, 2 tbsp double cream(optional) and handful chopped fresh parsley.
To serve: chopped fresh parsley and crusty bread..
