Donal Skehan served up a tasty spring vegetable tart with ricotta cheese, pecorino cheese, asparagus and lemon juice on This Morning.
The ingredients are: 500g frozen puff pastry block, thawed, 1 egg, beaten, 250g ricotta cheese, 50g pecorino cheese, finely grated, Few fresh thyme sprigs, Zest of 1/2 lemon and Sea salt and freshly ground black pepper.
For the topping: 200g peas, blanched and drained, 6 asparagus spears, finely sliced on a mandolin, 1 small courgette, finely sliced on a mandolin, Zest & juice of 1/2 lemon, Small handful of pea shoots, Small handful of mint leaves, 1 tbsp best quality extra virgin olive oil and 1 tbsp best quality balsamic vinegar.
