Raymond Blanc mussels with garlic butter and breadcrumbs recipe on Simply Raymond Blanc

Raymond Blanc served up tasty mussels with breadcrumbs and a garlic and herb butter on Simply Raymond Blanc.

The ingredients are: 1.8kg fresh mussels, About 100g Provençal breadcrumbs (see below), 1 small white onion, 2 bay leaves, 4 thyme sprigs, 2 tablespoon unsalted butter and 100ml dry white wine.

For the breadcrumbs: 100g bread, dried, 1 garlic clove, finely sliced, ¼ bunch (about 20g) flat leaf parsley, 2 thyme sprigs, leaves picked, 3 tablespoons extra virgin olive oil, sea salt and freshly ground black pepper.
