Juliet Sear served up a delicious guilt-free Victoria sponge with no added sugar jam on today’s episode of This Morning.
The ingredients are: 170g melted low fat spread, cooled, 160g self-raising flour , 1/2 tsp salt, 1 tsp baking powder, 4 large eggs , 160g caster sugar and 1 tsp vanilla.
For the filling: ½ tsp vanilla extract, 1 tablespoon icing sugar, 150g low fat double cream and 115g low sugar/diabetic strawberry jam.
A little icing sugar for dusting the top (optional).
