Raymond Blanc steak with red wine jus, wild mushrooms and sauteed potatoes recipe on Simply Raymond Blanc

Raymond Blanc served up Steak Maman Blanc and Steak with Steak with Red Wine Jus, wild mushrooms and saute potatoes on Simply Raymond Blanc.

The ingredients for the steak Maman Blanc are: 4 x 225g sirloin or rump steaks, organic, cut 2cm, fat trimmed, 4 small pinches sea salt flakes, black pepper, coarsely ground, 40g unsalted butter and 200ml water.

For the jus: 1 shallot, 200g field mushrooms, 300g inexpensive red wine (such as Cotes de Rhone), reduced by half in advance, 20g unsalted butter, cold, 1 small handful chopped parsley leaves stalks on, roll it and chop it with stalks, 1 sprig of thyme.
