Ed Balls served up a delicious banana bread with cream cheese frosting on Celebrity best Home Cook 2021 Final.

The ingredients are: 180ml vegetable oil, plus extra for greasing, 250g dark brown sugar, 1½ tsp vanilla extract, 3 free-range eggs, 425g very ripe bananas, peeled (about 3 large or 4 small bananas), 120ml natural yoghurt, 1¼ tsp bicarbonate of soda, 1¼ tsp baking powder, ¾ tsp ground cinnamon, 1½ tsp salt, 280g white spelt flour, 60g raisins and 1 tbsp caster sugar.

For the cream cheese icing: 200g full-fat cream cheese, 100g icing sugar, sifted, 1 tsp cornflour and 75ml (5 tbsp) double cream.

To decorate (optional): 1 banana, sliced in half, 2 tbsp light brown sugar and dark chocolate, for grating.
