Ruby Bhogal spicy lamb koftas with kale and pomegranate salad recipe on Steph’s Packed Lunch

Ruby Bhogal served up a tasty spicy lamb koftas with kale and pomegranate salad on Steph’s Packed Lunch.

The ingredients are: 1kg lamb mince, 300g white onion, peeled and diced, 45g fresh coriander, finely chopped, 4 tbsp fresh ginger, peeled and grated/paste, 2 1/2tbsp fresh garlis grated/paste, 2 1/2tbsp fresh mint, finely chopped, 5tsp green finger chilli, finely chopped, 2tsp garam masala and 2 1/2tsp salt.

For the salad: 400g kale, chopped, 1 pomegranate, seeds removed, 1 avocado, stoned and chopped, 1/2 medium red onion, thinly sliced, 1 lemon, 4tbsp extra virgin olive oil, salt and pepper, to taste.
