John Whaite served up a tasty posh onion soup on Steph’s Packed Lunch.
The ingredients for the croutons: 1 x French baguette, torn into chunks, 1 tablespoon garlic oil (or olive oil, if you prefer), 1 tablespoon caraway seeds, 150g Epoisses cheese, chilled and 100g Comte cheese, coarsely grated.
For the soup: 1 tablespoon olive oil, 100g unsalted butter, 500g pink onions, finely sliced, 2 tablespoons plain flour, 175ml dry white wine, 1 litre beef stock, 1 tablespoon onion chutney (optional, but damn good) and fine sea salt and coarsely ground black pepper.
