Clodagh McKenna served up a tasty and healthy kale with bean and winter root vegetables soup on Steph’s Packed Lunch.
The ingredients are: 3 tbsp olive oil, 3 carrots, peeled and cubed, 3 parsnips, peeled and cubed, 2 celery sticks, cubed, 1 onion, diced, 2 tsp finely chopped rosemary leaves, 3 garlic cloves, crushed, 1 litre hot chicken or vegetable stock, 250g cavolo nero, chopped, 2 x 400g cans cannellini beans, rinsed and drained and sea salt and freshly ground black pepper.
To serve: 50g parmesan cheese, shaved and 1 tbsp finely chopped rosemary leaves.
