Ruby Bhogal filo roast veg pizza recipe on Steph’s Packed Lunch

Ruby Bhogal served up a tasty filo roast vegetable pizza with pesto on Steph’s Packed Lunch.

The ingredients are: 2 red onions, roughly chopped into wedges, handful cherry tomatoes, cut in half, 1 red onion, deseeded and sliced, 2 button mushrooms, thinly sliced, 2 garlic cloves, peeled, 5 flo sheets, olive oil, a glug, salt and pepper, to season, 3 tbsp sundried tomato paste.

Optional topping: chicken, beacon, sweetcorn, broccoli, green peppers, jalapenos etc.

For the pesto: 50g pine nuts, basil approx 20g, 1 garlic clove, 50g grated Parmesan, extra virgin olive oil and a pinch of lemon zest (optional).
