Clodagh McKenna chicken tagine with toasted almonds and couscous recipe on Steph’s Packed Lunch

Clodagh McKenna served up a tasty chicken tagine with toasted almonds and couscous on Steph’s Packed Lunch.

The ingredients are: 6 Chicken Supremes, 2 onions, finely diced, 6 cloves of garlic, crushed, 4 sprigs of fresh coriander, finely chopped , 4 sprigs of fresh flat leaf parsley, finely chopped, 4 tbsp olive oil , 1 lemon, juice only, 2 tsp ground ginger , 5 tsp ground cinnamon , ½ tsp ground turmeric pinch of saffron , 50g golden raisins , 250g almonds blanched, skinned and toasted, Sea salt and freshly ground black pepper , 500g chopped tomatoes and 200ml chicken stock.
