Phil Vickery winter noodle soup with pork fillet and beansprouts recipe on This Morning

Phil Vickery served up a tasty winter noodle soup (pho noodle soup) with pork fillet and beansprouts on This Morning.

The ingredients are: 1 litre good quality, strong chicken or pork stock – if using stock cubes I use pork or chicken and they are roughly 10g each, for 1 litre I would add 3 or 4, 10 spring onions, sliced on the diagonal, 1 heaped tsp fresh red chilli, finely chopped, 3 cloves garlic, crushed, 2 tbsp fish sauce, 1-2 tbsp palm sugar or caster sugar, Salt, Pepper, 1 small pork fillet (about 350g) free of silver skin and any fat, 200g cooked rice vermicelli or noodles, 200g beansprouts, 1 small bunch Vietnamese or conventional coriander, 1 small bunch Thai Basil, 10 fresh mint leaves, Juice 2 large limes and Sliced fresh red chilli.

To serve, optional: Soy sauce, Extra lime and Extra herbs as above.
