Simon Rimmer served up a delicious choccy and cola cake with buttermilk, coffee and pistachios on Sunday Brunch.
The ingredients are: 225g flour, 225g sugar, 50g cocoa powder, 1 tsp baking soda, 100g pistachios, 65g butter, 75ml oil, 200ml cola, 100g buttermilk and 2 eggs.
For the buttercream topping: 250g butter, 500g icing sugar, 1 tsp vanilla and 50ml coffee.
Garnish with shaved chocolate.
