Simon Rimmer big bad cinnamon pancakes with berries and nuts recipe on Sunday Brunch

Simon Rimmer served up delicious big bad cinnamon pancakes with strawberries, blueberries and pecan nuts on Sunday Brunch.

The ingredients for the cinnamon mix are: 45g butter, 125g brown sugar, 1 tsp cinnamon and 25ml double cream.

For the pancakes: 240g plain flour, 1 tbps baking powder, 1 tsp salt, 260ml buttermilk, 2 eggs, 2 tsp vanilla extract and 40ml vegetable oil.

To serve: strawberries, blueberries, raspberries, pecans, mint, and thick Greek yoghurt and dusted with icing sugar.
