James Martin served up tasty kippers two ways (grilled with lemon and apple butter and hairy tattie fishcakes) on James Martin’s Saturday Morning.

The ingredients for the fishcakes are: 300g mashed potato, 300g kipper flesh, Squeeze of lemon, Salt and pepper, 100g plain flour, seasoned, 3 beaten eggs and 100g panko breadcrumbs.

For the sauce: 6 tomatoes, concassed and sliced, Few sprigs of Thyme, 2 cloves garlic sliced, 50 ml olive oil, Salt and pepper.

Apple butter kippers: 6 kippers, 1 bramley apple and 100g butter, softened.
