Tofu, aubergine and lotus root stew with rice flour is cooked Japanese style for Buddhist Monks

A Japanese tofu dish is served up on a road trip by the Bikers in Japan this week. Tofu, aubergine and lotus root stew with rice flour is said to be a dish fit for a monk.

The Hairy Bikers claim to have got their inspiration for this dish from the Buddhist vegetarian cookery of Japan:
“It’s a celebration of Kyoto’s tofu culture. The Japanese aubergines used in the dish are longer and thinner than the ones we usually use.”
