Benjamina Ebuehi blackberry coconut and white chocolate traybake recipe on Lorraine

Benjamina Ebuehi served up a delicious blackberry coconut and white chocolate traybake on Lorraine.

The ingredients: 200g unsalted butter, softened, 225g caster sugar, 1 tsp vanilla extract, 4 medium eggs, 225g plain flour, 1 tbsp baking powder, 50g desiccated coconut, ¼ tsp salt, 150g fresh blackberries, tossed in a little flour, 50ml whole milk and 75g white chocolate, chopped.

To decorate: 500ml double cream, 2 tbsp icing sugar, 2 tsp vanilla bean paste, Coconut flakes, lightly toasted, 50g white chocolate and a handful fresh blackberries.
