Ainsley Harriott jerk pork belly with roti and coconut and mango slaw recipe on Ainsley’s Food We Love

Ainsley Harriott served up tasty jerk pork belly with roti and coconut and mango slaw on Ainsley’s Food We Love.

The ingredients for the pork belly: 1/2 onion, finely diced, 2 garlic cloves, finely chopped, 1-2 scotch bonnet chilli, finely chopped, 2.5 cm piece ginger, peeled and finely grated, 2.5cm piece turmeric, peeled and finely grated(or 1 tsp ground turmeric), 2 sprigs of thyme, leaves picked and finely chopped, 1 tsp ground allspice, 30ml soy sauce, 30ml white wine vinegar, 1.8kg pork belly, rind scored, sea salt and freshly ground black pepper.
