Bosh spicy Dan Dan noodles recipe on Steph’s Packed Lunch

Bosh served up a tasty vegan spicy Dan Dan noodles on Steph’s Packed Lunch.

The ingredients are: 1tbsp sesame oil, plus extra if needed, 125g shiitake mushrooms, finely chopped , 200g plant-based mince , 3 spring onions, trimmed and sliced, 200g ramen noodles (or whichever noodles you prefer), 2 garlic cloves, peeled and grated , 2cm piece of fresh ginger, peeled and grated, 1tsp Chinese 5 spice , Chilli oil, for drizzling, 2tbsp sesame seeds and Salt.

For the sauce: 50ml water, 2tbsp tahini , 2tbsp soy sauce , 1tbsp rice vinegar or balsamic vinegar , 1tbsp sesame oil, 1tsp sugar and 1tsp chilli flakes.
